4-6 thick slices of your favourite steak (Rump, New York, Scotch Fillet)
3/4 cup dry red wine
1/4 cup of oil
1 onion sliced
1 bay leaf, crumbled
4 stalks fresh parsley
1/2 pinch dried tarragon or thyme
Salt and freshly cracked pepper
Trim fat from steak and lay in glass or ceramic dish. Mix the remaining ingredients excluding the salt and pour over steaks. Cover and place in the fridge for several hours. To cook, place steaks on preheated medium to high grill, and turn when juices begin to come through to the surface of the steak. Baste steaks with remaining marinade while grilling for maximum flavour. Cook to taste.
